Fill a saucepan with water and heat until boiling. Drop your jicama sticks in and cook them for about five minutes until slightly softened. In my experience making this dish, I’ve found that boiling helps remove the extra stiffness from jicama so the air fryer’s heat can cook through it. In the meantime, preheat your air fryer to 400 degrees Fahrenheit. Carefully strain the jicama fries from the boiling water, pat them dry, and set them in a bowl to coat in olive oil, salt, and any other seasoning you’d like to use to spice up your fries. Transfer the seasoned jicama to your air fryer, but be sure not to overcrowd the basket. Cook for 10 to15 minutes, shaking the basket halfway through for an even crisp on all sides.
